COOKING + SIPPING WITH ROSEWOOD WINERY
It’s no secret that Matt + I love food and love wine.
It’s also no secret that Matt is the cook in our house and I am the official wine pourer - a job I take VERY seriously I might add!
So when we had the opportunity to partner with one of our favourite local wineries Rosewood Estates Winery we were extremely excited to get started and pair their exceptional wines with some exceptional dishes created by Biceps and Brussel Sprouts.
This dish is one that Matt has created a few times and it is FANTASTIC!
We paired it with Rosewood’s Riesling AF wine and oh my goodness the flavours just blended beautifully. The wine was delightful on its own but WOW, what an Up Level once paired with dinner.
This is a MUST try recipe + wine, especially when you enjoy both of these delightful things together!
DECONSTRUCTED SESAME TUNA MAKI BOWL
INGREDIENTS
2 portions fresh Ahi Tuna (about 1/2 lb each)
1/4 cup each white and black sesame seeds
1 cup shelled edamame
1 bunch scallions
1/2 English cucumber julienned
1 ripe avocado
1/2 lime
Pickled ginger
1 cup jasmine rice
1 tin coconut milk
Cilantro
Chilli pepper
2 tbsp Tamari or Soy sauce
1 tsp sesame oil
1 tsp honey
Salt
1 tbsp Evoo
DIRECTIONS
Add rice and coconut milk to small pot until boil. Reduce heat to low, cover and let simmer for 15 mins. Remove from heat and let sit.
Preheat cast iron pan over medium heat. Mix sesame seeds and pinch of salt in a shallow bowl. Coat each tuna steak thoroughly on each side.
Add Evoo to cast iron pan when hot and sear tuna for no more than 2 minutes per side.
Remove tuna from pan and set aside.
Next, add avocado, pinch of salt and lime juice to food processor and pulse until smooth.
Place scallion bunch in a single layer on grill over medium heat turning often for 3-4 minutes.
To plate, spoon avocado mixture over top of the bowl. Add coconut rice to centre of bowl. Slice tuna 1/2 thick on an angle and fan gently over top. Place cucumber and edamame on either side and garnish with pickled ginger, cilantro and sliced chilies.
Mix tamari, sesame oil and honey together and spoon mixture over top both bowls.
